Tomato basil Pasta

Pasta drives me and my family crazy. Last Saturday I picked basil leaves and tomatoes to give pasta a different flavor. Wow....does this flavor give you same expression, do try and share....





preparation Time : 25 Min

Cooking Time : 10 Min

Ingredients :

For Pasta :




  • 1 Cup boiled bow pasta
  • 1 Tablespoon Butter
  • 1/2 Tablespoon olive oil
  • 2 Tablespoon tomato and basil sauce
  • 1/2 Tablespoon chopped garlic
  • 2 Tablespoon chopped tomatoes
  • 1 Teaspoon mixed herbs
  • Few olives and jalapeño pepper (for garnishing)
  • Few fresh basil leaves
  • 1 Teaspoon vineger 
For Tomato and Basil Sauce :
  • 1 Tablespoon olive oil
  • 1 Tablespoon chopped garlic
  • 2 Tablespoon chopped onions
  • 4 Blanched, peeled and chopped tomatoes
  • 1 Teaspoon mixed herbs
  • 1 Teaspoon chilly flakes
  • Few chopped olives
  • Few chopped jalapeño peppers
  • Few basil leaves 
  • 2 Tablespoon tomato sauce 
  • 1 Teaspoon sugar
  • Salt according to taste
Procedure :
  • Boil pasta along with few drops of oil and salt and keep aside
For Tomato and Basil Sause
  • Take 4 medium size tomatoes blanch them in hot water, remove the skin, chop them and keep it aside

  • Now in a pan take olive oil add chopped garlic sauce and add chopped onions to it and cook for 2 to 3 minutes


  • Now add blanched and chopped tomatoes cook it for 2 -3 minutes



  • Add mixed herbs, chilly flakes, chopped olives, jalapeño peppers, salt and basil leaves and cook for 2 minutes



  • Now add tomato sauce to this cook it for 2 minutes and add sugar to this 


  • Tomato basil sauce is ready keep it aside

For Pasta :
  • Take pan add olive oil and butter (if you will cook only butter it will burn, by adding a bit of oil to butter burning of butter is avoided
  • Add chopped garlic and cook it

  • Now add 2 tablespoon of sauce, cook it for 2 minutes then add chopped tomatoes and mixed herbs 



  • Add cooked pasta to this mix it well with sauce, add some basil leaves


  • Pasta is ready serve it hot with some olives, jalapeño and vinegar 


Tips : You can change the quantity of garlic and spices according to your taste

Rava Toast

Rava Toast

Last Sunday morning I was totally confused, members of family were asking for dosa, idli in breakfast and I wanted something of north bread or paratha. This gave birth to new idea where I gave south Indian flavors to my toast. Do share your experience...




Preparation Time : 10 Min

Cooking Time : 10 Min

Ingredients :

  • 6 Brown bread slice (you can use white bread also)
  • 1/2 Cup rava (sooji)
  • 2 Tablespoon curd
  • Few curry leaves
  • Few mustard seeds
  • Pinch of asafoetida (hing)
  • 1 - 2 Green chiles chopped
  • 1 Tea spoon urad dal (split black without skin lentil)
  • 1 Teaspoon channa dal (bengal gram)
  • 2 Tablespoon finely chopped onion
  • Salt according to taste
  • Red chilly powder according to taste
  • Oil for cooking + 1/2 tablespoon for tadka
Procedure :
  • In a bowl take rava, curd , chopped onion, salt and red chilly powder



  • Now In a tadka pan take 1/2 tablespoon of oil, as oil gets heated add mustard seeds, hing, urad dal, channa dal, green chillies and curry leaves. pour this tadka on rava and curd mixture


  • Now mix all ingredients nicely and if it is thick add 2 tablespoon of water and form a mixture of smooth consistency 

  • Take a pan, brush some oil on it. Now take a bread apply rava mixture on one side and put it on pan for cooking with the rava mixture side at bottom





  • Cook it for 2 minutes on medium flame now turn and cook from other side also

  • Repeat the same step with other bread slices 

  • Rava toast is ready ....

Baked Potato Wedges

Potato Wedges are liked by most of us and now a days we have it handy also in the form of frozen wedges packets available in market to serve our kids, last minute guest or to pamper ourselves. But while eating, we are always concerned about the oil it consumes during deep frying ..... So lets give our favourite wedges a healthier twist....

Preparation Time : 10 -12 Min

Cooking Time : 10 -12 Min

Ingredients :


  • 2 Medium Size potatoes, cut into wedges
  • 2 Tablespoon corn flour
  • 2 Tablespoon olive oil +1 teaspoon oil for greasing
  • 2 Tablespoon bread crumbs (I used brown bread for making crumbs)
  • 1/2 Teaspoon red chilly flakes 
  • 1/2 Teaspoon roasted garlic flakes
  • 1/2 Teaspoon mixed dried herbs or pizza seasoning
  • Salt according to taste
Procedure :
  • Take potatoes wash them and cut them into wedges. Now parboil them in salt water (I kept them for 2 - 3 minutes in boiling water)
  • Once done drain them and pat dry them on kitchen towel. make sure that all moisture gets removed

  • In a bowl take wedges add oil and all other ingredients and toast them well





  • Preheat oven for 10 Minutes at 180 degree C
  • Take baking tray use silicon sheet or foil (I used foil) grease it with oil and arrange wedges on the tray

  • Now bake the wedges for 10 -12 minutes or till they are crisp

  • Sprinkle some mixed herbs and serve them hot with some beverages 

Tips : You can use baking tray without foil also but grease it nicely
You can increase or decrease the quantity of spices according to your taste
Once wedges are done serve immediately otherwise it will be soggy
If you want you can deep fry the same instead of baking

Melon Chiller

Melon Chiller



Chilled Melon drink can be served to pamper your near and dears......

Serves : 4

Preparation Time : 7 Min

Cooking Time : 0 Min

Ingredients :


  • 1 Cantaloupe Melon 
  • 10-15 Mint leves
  • Sugar syrup 2 Tablespoon (or according to taste)
  • Lemon juice 2 tablespoon
  • 200 Ml chilled soda
  • Crushed ice cubes
For Garnishing:
  • Few melon balls
  • Few mint leaves
  • Lemon wedges
  • Few Cherries
Procedure :
  • For Sugar syrup add 5 Tablespoon of sugar in 1/2 cup of water and mix it well. 
  • Now in mixer add melon cubes, mint leaves, sugar syrup, lemon juice and blend it well 



  • Now with the help of a stainer, stain the juice and keep side


  • Take a glass add crushed Ice, few mint leaves , small lemon wedges, melon ball and a cherry as shown in picture

  • Now fill glass half with the melon juice and top up with chilled soda



  • Melon chiller is ready serve it and enjoy it ....
