Panjiri (Indian Sweet Snacks from Punjab Region)


As Winter started some nutritional supplement is required for the family and Panjiri is the perfect snack. Panjiri is an Indian sweet snacks from Punjab region. It is made from the whole wheat flour roasted in pure ghee and loaded with dry Fruits. It helps us to beat extreme winters, so to keep your family strong and healthy, do serve them Panjiri made with love......

Preparation Time : 10 Min

Cooking Time :  40 to 50 Min

Ingredients :

  • 1 Cup plus 2 tablespoon pure ghee
  • 1 Cup wheat flour
  • 1 Cup sugar
  • 1 Cup Almonds
  • 2 Table spoon Cashew nuts
  • 1 Cup puffed lotus seed (makhane)
  • 2 Table spoon water melon seeds
  • 2 Tablespoon melon seeds
  • 2 Tablespoon pistachio nuts ( pista)
  • 1 Teaspoon green cardamom powder
Procedure : 
  • In a pan, heat 1tablespoon of ghee, add almonds, cashew nut and saute it for a minute or two. Now add water melon seeds to this, once the dry fruits are nicely fried in ghee, transfer in a bowl 

  • Now in same pan add 1 tablespoon of ghee and add puffed lotus seeds, fry it nicely for 5 to 7 minutes. Once it is nicely cooked with ghee, transfer it in another bowl 

  • Now coarsely grind dry fruits and then makhane in a mixer and mix them in a bowl 


  • Again take the same pan and add 1 cup ghee and flour to this, roast flour over slow flame around 25 to 30 minutes or till the flour changes to golden brown color and nice aroma is smelled 


  • Now add cardamom powder, crushed pista and melon seeds to this, roast it for 5 minutes

  • Now add the dry fruit mixture to this and keep on stirring the mixture for another 5 to 7 minutes

  • Turn off the flame add sugar to this and keep stirring for 2 to 4 minutes. Allow the mixture to cool down 

  • Panjiri is ready enjoy it or keep it in an air tight jar and use it when ever you feel like....

Note : In traditional panjiri we use few herbs also like (Sauf, methi, flame of the forest, ajwain, edible gum crystal ) but while adding all the above ingredients it becomes hot food and taste also bitter . As I usually serve this to my daughter so I avoid the herbs and my intention is to serve her something which is nutritious and of her taste also....

Assorted Vegetables in Chilly Garlic Sauce 

Me and my family enjoy Chinese food.  But today I was not in a mood to make oily and fried chilly paneer or Manchurian. So thought to make something light and healthy with very less oil and having all flavors....  Prepared Assorted vegetables in chilly garlic sauce with very less oil and served it with boiled rice....  So very healthy and less oily dinner served with Chinese aroma and is ready in few minutes.... 




Preparation Time :10 min

Cooking Time : 10 min

Ingredients :


  • 1 Tablespoon chopped garlic
  • 1 Tablespoon sliced green chilly
  • 1 Tablespoon olive oil
  • 1 Tablespoon chopped spring onion greens
  • 1/2 Cup diced onions
  • 1/2 Cup diced Bell peppers
  • 1/2 Cup diced carrot
  • 1/2 Cup diced capsicum 
  • 1/2 Cup baby corn
  • 1/2 Cup broccoli
  • 1/2 Cup diced cabbage

  • 1 Tablespoon tomato sauce
  • 1/2 Tablespoon soya sauce 
  • 1/2 Tablespoon corn flour
  • 1/2 Tablespoon Ching's miracle chilly paneer masala ( it's optional to enhance the flavor )
  • 1 Teaspoon crushed black pepper
  • Salt according to taste
Procedure :
  • Finish all cutting and chopping 
  • Now in a pan take oil heat it add chopped garlic to this saute it now add green chilly.  Now add diced onions and saute it

  • Add all the vegetables carrot, baby corn,  broccoli, capsicum,  bell peppers and saute it nicely on high flame

  • Now add cabbage to this add crushed black pepper and salt to this


  • In a bowl mix tomato sauce,  soya sauce,  corn flour,  Ching's miracle masala with 1 cup of water.  Now add this mixture to vegetables. Cook it for 4 to 5 min or till it is done

  • Assorted vegetables in chilly garlic sauce is ready, serve it with boiled rice or fried rice.....

Grilled Baby Potato with Vegetables

We all enjoy grilled food at restaurants so let's make a simple but restaurant style dish in a simple way at home. Baby potatoes and vegetables grilled on pan with a flavour of herbs and garlic.....



Preparation Time : 15 min

Resting Time : 45 min

Cooking Time : 10 min

Ingredients :


  • 1 Cup blanched baby potato
  • 1 Cup diced vegetables  (onion, capsicum, Bell pepper, tomato without seed )


For Marination :

  • 1 Tablespoon olive oil
  • 1 Tablespoon garlic paste
  • 1 Teaspoon green chilly paste
  • 1 Teaspoon soya sauce
  • 1 Teaspoon mixed herbs
  • 1 Teaspoon tomato chilly sauce
  • 1 Tablespoon cornflour
  • Crushed black pepper according to taste
  • Salt according to taste
For Garnishing :
  • Salad 
  • Lettuce leaf
  • Green chutney
Procedure :
  • Take baby potato clean it nicely and blanch it so that it is 80% cooked with skin
  • Cut vegetables (onions, tomato, capsicum, bell pepper or any other vegetables of your choice)
  • In a bowl prepare marination by adding olive oil, garlic and chilly paste, crushed pepper , mixed herbs, soya sauce, tomato sauce and corn flour mix all well


  • Now add baby potato and vegetables to the merination mix and keep this aside for 40 min


  • Now take wooden sticks and arrange baby potato and vegetables 

  • In a grilled pan add a tablespoon of olive oil and grill baby potatoes and vegetables on it for 7 to 8 min. In between turn the sticks so that it is cooked from all sides nicely


  • Grilled baby potato and vegetables are cooked serve it with salad of your chice as I used plum salsa and green chutney .......

Kheer

Kheer (Kheer, Payasam, Rice Pudding) .......


Rice simmered in milk with dry fruits and sugar. Kheer is a traditional dessert and is served during all festivals, puja, served for guests at home, special occasions and many more.... I thing we Indians if we are preparing something in dessert first option which comes to mind is kheer.... I loved kheer so much, whenever my Mom used to prepare this, I go crazy .... same with my daughter....

Preparation Time : 20 min

Cooking Time : 40 to 50 min

Ingredients :

  • Rice 1/2 cup or 4 tablespoon
  • Milk 1 ltr full cream
  • Sugar 1/2 cup
  • Chopped almonds without skin 2 tablespoon
  • Chopped cashew nuts 2 table spoon
  • Chopped pistachio nut 2 tablespoon
  • Raisin 2 tablespoon
  • Saffron 12 to 15 strands dissolved in warm milk
  • Green cardamom powder 1/2 teaspoon
Procedure 
  • Wash and soak rice for half an hour in warm water
  • Blanch almond nuts in hot water, cool, remove skin and slice it
  • In a pan boil milk. Add rice in boiling milk. On low flame cook rice and milk.

  • Once the rice is 90% cooked add cardamom powder, saffron,  almonds, pistachio, cashew nuts, and raisins 


  • Cook it for five minutes now add sugar.

  • Once it is done pour it into a bowl and keep in refrigerator for 2 to 3 hours

  • Kheer is ready; serve it chilled and garnish it with dry fruits and rose petals.

Tips : you can change the quantity of sugar according to your taste...

Sweet Potato Chaat

Sweet Potato Chaat


Whenever in winters I visit sector 17 market in Chandigarh it is very difficult to resist myself from having a Sweet  Potato Chaat.  Roasted sweet potato with green and red chutney plus lemon squeezed over it, makes it an ultimate dish.....

Preparation Time : 10 min

Cooking Time:  7 min

Ingredients:

  • 3 - 4 Boiled sweet potato
  • 2 Tablespoon green chutney
  • 2 Tablespoon imly ki chutney
  • 1 Lemon
  • Black salt according to taste
  • Chaat masala according to taste
Procedure 
  • First take boiled sweet potato and to give it a roasted effect just roast it on gas stove for 5 to 7 min or till it is cooked from all sides and has a nice smell

  • Now peel the skin off form sweet potato  and cut it into pieces 

  • In a serving plate arrange the sweet potato pieces and add green chutney
  • Add imly kids chutney according to your taste now squeeze lemon on it

  • Sprinkle black salt and chat masala to this

  • Sweet potato Chaat is ready, enjoy street style chaat at your home......
