Seeds and Nuts Trail Mix. 

Very delighted to share that being part of group like Kukclean, which is totally based upon healthy living, healthy cooking, and holistic food . So I also have a habit of every time giving good and healthy nutrients to my family.

I am also part of Mudypuddler and they recently associated me with a brand called Puremart

Puremart, i am really thankful to you for sending me such a nice pack of all super foods like pumpkin seeds, sunflower seeds, flaxseeds. They all are so fresh and nice. which i am using daily in my eating whether it is a salad or smoothie or if i need something to munch. 

 Today my husband was traveling, I don't want him to consume chips, fried nankeens or similar unhealthy stuff which is easily available the market. Rather i thought he needs something healthy and filling, which he can easily carry with himself. So I prepared my seeds and nuts trail in which i used pumpkin seeds, Sunflower seeds, flex seeds, Sesame seeds and nuts like almonds, raisin and cashew.

Benefits of Pumpkin Seed : It is full of nutrients, and packed with antioxidants.It is good source of fibre.

Benefits of Flex seeds : It is again loaded with many nutrients. Rich source of Omega 3 fatty acid. It contains high quality protein.

Benefits of Sunflower seeds : It rich in Vitamin B complex, and a good source of  Phosphorus, Magnesium, Iron, Calcium and Vitamin E. It act as a Immunity boaster also... So the benefits are endless 

I simply dry roasted all the nuts and seeds. As all seeds and nuts are having their individual size and shape and hence should be roasted separately.  I pan roasted them separately and then mixed with sesame seed oil and little bit of chat masala powder, roasted jeera and rock salt to give it an Indian namkeen taste which we all love.

Preparation Time : 5 min

Ingredients :  



  • Pumpkin Seeds 1 Tablespoon
  • Sunflower Seeds 1 Tablespoon
  • Flex Seeds 1 Tablespoon
  • White sesame seeds 1 Tablespoon
  • Cashew-nut 20 to 25
  • Almond sliced 1 Tablespoon
  • Raisin 1 Tablespoon
  • Sesame oil 1 teaspoon
  • Rock salt according to taste
  • Roasted Cumin powder 1/2 Teaspoon
  • Chaat Masala 1/2 teaspoon
Procedure :  
  • Take all the Ingredients 

  • In a pan dry roast all the nuts and seeds Individually as all the ingredients have different shape and size so they took different time to get roasted. except raisin. 







  • Once all the nuts and seeds are dry roasted. Take a pan add a teaspoon of sesame oil in it now add cashew nuts, sliced almonds, pumpkin seeds, sunflower seeds, flex seeds, sesame seeds mix them all and roast for a minute. Now sprinkle rock salt, cumin powder and chaat masala mix it well . turn off the gas. 




  • Now add raisin to this mix it slightly



  • Once the mixture is cool transfer it in to a airtight container . Enjoy when ever you want to 



Tips.

  • If you want to serve to your kids you can avoid spices. It is your choice. You can also keep this mixture prepared and keep it as a young for smoothies or ice creams or salads whatever you like.

Poha Tikki

Poha Tikki (Flattened Rice Tikki)  

Here comes a Sunday. Week long wait is over. Time to delight yourself. Day to pamper yourself. Everyday we are focussed on eating healthy oil free food. But on a Sunday, we can relent a bit and let our taste-buds enjoy little.

So what to prepare today. I thought. Again thought. Sandwiches, paranthas, poories, dosa, idli, poha etc. Tough question to answer. But I want something that can be a brunch. Heavy also filling also and of course give a feeling of Sunday to break free our soul from all guilt.

Hence I tried this experiment. I prepared poha cutlets. In these poha cutlets I added raisins, roasted peanuts, cashew giving all together a different crispy and crunchy texture in mouth. Raisins are giving mild sweet taste with mix of nuts pampering your taste buds will create mild soothing taste and mind will relish the ingenuity.

I found my daughter and others relishing it. Do try and surprise your family with this innovation and do share your feedback.





Preparation Time :  30 Min

Cooking Time :  20 Min

Ingredients :

  • Poha 1 cup (washed in water and soaked)
  • Potato boiled 4 medium size
  • Green peas boiled and crushed 1/2 cup
  • Raisin 1 Tablespoon
  • Peanut roasted and crushed 2 Tablespoon
  • Cashew nuts 6 to 7 crushed 
  • Green chillies 2 chopped
  • Ginger crushed 1 teaspoon
  • Coriander 1 Tablespoon chopped
  • Salt according to taste
  • Oil for frying
Procedure :  
  • Take washed and soaked poha in a bowl.

  • Add boiled and granted potato in this



  • Now add green peas, ginger, raisins, peanuts, cashew nut, green chillies, coriander and salt



  • Mix all together and form a dough

  • Take a small portion of dough and form a small tikki . Repeat the same step with rest of the dough.


  • In a kadahi heat oil. deep fry poha tikki on medium flame

  • Once the tikki is cooked take out on kitchen towel so that the excess oil is removed

  • Serve it with a cup of tea or coffee

Rice Dhokla

Rice Dhokla

Rice Dhokla is a steamed cake made from rice and multigrain with a flavour of ginger and green chilly. I usually prepare the batter day before and enjoy this heathy snack with my family and friends .



Preparation Time : 20 Min

Resting Time : 10 hours + soaking time

Cooking Time : 20 Min

Ingredients :



  • Rice : 1Cup
  • Black Gram Skinless dal (urad dal)  1/3 cup
  • Yellow Gram dal (channa dal) 2 Tablespoon
  • Curd 1/2 Cup
  • 1 Tablespoon oil
  • 2 Green chilly
  • Salt as per taste
  • Ginger 1 Inch piece
  • 1/2 Tablespoon fruit salt (I used Eno)
  • 1 Tablespoon lemon juice
  • 1/2 Tablespoon Sugar
For Tadka :


  • 1 Tablespoon oil
  • 1 Teaspoon mustard seeds
  • 1 Green chilly chopped
  • Pinch of hing
  • 1/2 Tablespoon til seeds
  • 1 Table spoon chopped coriander leaves
  • 1 Teaspoon red chilly powder
Procedure :
  • In a bowl soak rice and both dals in water for an hour or two

  • In a mixer add soaked rice and dals along with green chilly, ginger and salt and grind it nicely. you will get a smooth paste 





  • In a bowl take this mixture, add curd and 1 tablespoon of oil, mix it well



  • Keep this mixture aside in warm place for eight to ten hours so that the mixture gets fermented

  • Once the batter is fermented, add Sugar and lemon juice to this and mix well



  • Grease the dhokla stand plates 

  • Now add fruit salt to the batter and mix it



  • Pour batter in dhokla plates and repeat the steps with rest of the plates

  • Keep this in a steamer and steam dhokla for 15 - 18 minutes



  • Once it is done do a knife check. If Knife comes clean that means dhokla is cooked take it out on a platter 


For Tadka (tempering) :
  • In a pan add a tablespoon of oil
  • Once oil is heated add mustard seeds, pinch of hing once it is tempered add chopped green chillies

  • Now add Til seeds roast for 10 seconds, add chopped coriander and chilly powder and pour this tadka on rice dhokla 







  • Cut Dhokla in pieces and serve with green chutney with a cup of tea ...



Tip : Take knife check to check if the dhokla's are properly cooked
