Rice Corn Balls

Rice Corn balls 

 Rice corn and cheese blended together,  coated with bread crumbs forms a perfect party starter or evening tea snacks,  whichever way you like to entertain your loved ones...



Preparation Time : 20 Min

Cooking Time : 20 Min

Ingredients :

  • 1 Cup cooked rice
  • 1 Cup cooked and coarsely crushed sweet corns
  • 1 Tablespoon cooked sweet corns
  • 1 Medium size boiled and grated potato
  • 2 Tablespoon grated cottage cheese 
  • 1/2 Cup bread crumbs
  • 2 Chopped green chillies
  • 2 Tablespoon chopped coriander leaves
  • Salt according to taste
  • Crushed black pepper according to taste
  • 1 Teaspoon chat masala
  • Oil for frying
  • 1/2 Cup bread crumbs for coating
Procedure : 
  • Finish all cutting and chopping 
  • In a bowl take cooked rice, add grated potato, cottage cheese, crushed sweet corns, sweet corns and bread crumbs


  • Add other ingredients, green chilly, coriander leaves, salt. Crushed pepper and chat masala


  • Now mix this mixture nicely and form a dough 
  • Divide the mixture in equal portions and form small round balls
  • In a plate, take bread crumbs and roll these balls in bread crumbs nicely
  • In a pan heat oil and deep fry 3 to 4 balls at a time till they are golden brown in color and cooked from all sides

  • Rice Corn Balls are ready to serve hot with red and green chutney.....

Chinese Chaat

Chinese Chaat

 Being from north, I can't resist my craving for chaat as well as a big fan of Chinese. Recently on a weekend,  there was a debate in house to make Chinese or chaat. I just combined basic ingredients of Chinese noodles and vegetables with chutney and chaat spices. For my family, it was an instant hit, do share your family feedback on this...


Preparation Time : 15 min

Cooking Time : 20 min

Ingredients

  • 2 Cup boiled and fried Noodles
  • 1 boiled and fried potato 
  • 2 Tablespoon roasted peanuts
  • 2 Spring onions sliced 
  • 2 Spring onions green chopped
  • 1 Carrot sliced
  • 1 Cup mixed bell peppers (red, yellow and green)
  • 1 Cup shredded cabbage 
  • 1 Teaspoon garlic (if you have dried garlic use that or the fresh one)
  • 2 Green chillies chopped and soaked in a tablespoon vinegar 
  • 2 Tablespoon green chutney
  • 2 Tablespoon imli ki chutney
  • 1 Tablespoon tomato sauce 
  • 1 Tablespoon lemon juice
  • 1 Teaspoon olive oil
Procedure 
  • First take noodles and boil it upto 80%, now deep fry it . 
  • Finish all other preparations like roasting peanuts, cutting and chopping of vegetables and boil and fry potato and keep aside
  • Once all the preparation is done, take a bowl and add crispy fried noodles to this

  • Now take a pan, add oil to this and once oil is heated add garlic to this. Further add onions and saute it then add sliced carrots to this. Cook it on high flame add bell peppers to this 



  • Add cabbage and saute it. Salt and crushed black pepper can be put according to your taste and a spoon of tomato sauce. Make sure that vegetables are not over cooked, we have to just toast the vegetables so that the crunchiness of vegetables remain

  • Now add these toasted vegetables to the noodles bowl and add all the other ingredients one by one, potatoes, peanuts, green chillies, spring onions green, lemon juice and imly ki chutney



  • Mix all ingredients nicely and serve immediately 

Tips : Try to serve it immediately as you mix all the ingredients otherwise it will be soggy. you can add chutney, chilly and spices according to your taste.

Crispy Baby Corn

Crispy Baby Corn

Baby corns are the vegetables I like the most. I always prefer to add them while cooking . This time I tried to prepare starter " Crispy Baby Corn" perfect for party and evening tea time. It's so easy to make with just few ingredients.



Preparation Time : 10 Min

Resting Time : 15 Min

Cooking Time : 10 Min

Ingredients :
  • 200 gms blanched baby corn
  • 1 Tablespoon ginger garlic paste
  • 1 Tablespoon olive oil
  • 1 Teaspoon red chilly flakes
  • 1 Teaspoon oregano
  • 1 Tablespoon chopped parsley
  •  1 Tablespoon tomato sauce
  • Salt to taste
  • 2 Tablespoon Rice flour
  • 1 Tablespoon all purpose flour (maida)
Oil for Frying

For Garnishing :
  • Chat masala
  • Sauce or chutney of your taste
Procedure :
  • Very first thing we have to do is blanch baby corn and keep it aside. for blanching just cook baby corn in boiling water for 5 min either on microwave or gas

  • Now in a bowl add olive oil, ginger garlic paste, red chilly flakes, oregano, chopped parsley, tomato sauce and salt now mix all ingredients nicely and add cooked baby corn in this marination and keep a side for 15 minutes


  • Heat a oil in pan for frying
  • In another bowl mix rice flour and  maida. now add marinated corns in this. once baby corn is nicely coated with flour mixture deep fry this till it is cooked from all side.



  • Crispy baby corn is ready, serve it with chat masala, sauce or chutney of your choice

Tip :  while frying take care that the excess flour should not go into the pan so before putting baby corn into the pan just tap it little bit so that the excess flour is removed.

Til Paneer with assorted vegetables (Sesame Cheese)

Winters are on. Paneer is a rich source of proteins. I added sesame seeds and served it with assorted vegetables to create taste and nutrition combo for family


Preparation Time : 40 Min

Cooking Time : 20 Min

Ingredients :


  • 200 gms cottage cheese
  • 1 Tablespoon ginger garlic paste
  • 8 To 10 soaked cashew nuts
  • 1 Tablespoon soaked sesame seeds
  • 1 Tablespoon hung curd
  • 1 Chopped green chilly
  • 1 Tablespoon chopped coriander
  • 1 Teaspoon olive oil
  • Salt to taste
  • Red chilly powder according to taste
  • 1/2 Cup sesame seeds for coating
  • 2 Tablespoon oil for shallow frying
Assorted vegetables :


  • 1 Tablespoon olive oil
  • 1 Tablespoon ginger and garlic paste
  • 2 Green chillies chopped
  • 2 Cup assorted vegetables (Red, Green, Yellow pepper, cabbage, broccoli)
  • 1 Onion diced
  • 1 Tablespoon tomato sauce
  • Salt according to taste 
  • Crushed black pepper according to taste
Procedure :

For  Til Paneer :
  • Soak Cashew nuts and sesame seeds separately in a 1/2 cup of water for 40 minutes
  • Cut Paneer in four equal portions
  • Now drain the excess water from cashew nuts and sesame seeds and grind this in a mixer to form a smooth paste

  • In a mixer now add ginger garlic paste, chopped green chillies, coriander, salt, red chilly powder and olive oil and grind all ingredients nicely


  • Now transfer this in a bowl add a tablespoon of hung curd to this and mix it nicely

  • Add Paneer fingers in this mixture and coat it nicely with this marination
  • Take 1/2 cup sesame seeds in a plate and coat marinated Paneer nicely with seeds

  • Now heat oil in a pan and shallow fry these marinated til Paneer nicely from all sides

  • your Til Paneer Is Ready....

For Stir Fry Vegetables :
  • Cut and chop all the vegetables and keep aside
  • Now in a pan, heat oil, saute garlic and green chilly in this

  • Now add onions to this, cook for a minute on high flame
  • Now add broccoli to this, saute it add red, green and yellow bell pepper to this and saute it for 2 minute 

  • Now add cabbage to this, saute it and add salt, black pepper and tomato sauce to this, cook it for another 2 minutes on high flame ......

Serving :

 Take a serving plate, keep some salad leaves and place your Til Paneer on this you can also use tikka stick for nice presentation . Serve this with assorted vegetables and chutney to your dears.

Green Dhokla (Hara Bhara Dhokla)

Dhokla is one of the favorite snacks of my family. As now winter season is on and my kitchen garden is loaded with lots of spinach and fenugreek leaves so, I just thought to give our normal Dhokla a healthy twist by adding few greens to it like green peas, spinach, fenugreek and coriander leaves so that I can feed my kids with more healthy option....



Preparation Time : 15 Min

Cooking Time : 15 Min

Ingredients :

  • cupspinach, shredded, ( palak)
    1 cup fenugreek leaves, shredded,( methi)
    1 ½ cup chick pea flour,( besan)
    ½ cup water
    2 tbsp sugar,(cheeni/ shakkar)
    2 tsp ginger-green chilli paste, ( adrak aur hari mirch ki paste)
    ½ tsp Mustard seeds,(sarson/ rai)
    2 tbsp fruit salt
    1 red chilli for garnish, laal mirch,
    Salt to taste, namak
    1 tsp Oil + for greasing the dhokla moulds
    2 tbsp coriander, chopped,( dhaniya)
    ½ cup coconut, grated, (kasa hua nariyal)
    4 tbsp coriander chutney to serve

    1 Cup chick pea flour ( besan)
  • 1 Cup spinach ( palak)
  • 1 Cup fenugreek leaves ( methi)
  • 1/2 Cup green peas
  • 2 Green chillies
  • 2 Tablespoon coriander leaves
  • 1 Tablespoon ginger garlic
  • 1 Tablespoon cooking oil
  • 1 Tablespoon sugar
  • Salt to taste
  • 1 Tablespoon fruit salt
  • Water to make smooth paste
For Garnishing :
  • 1 Tablespoon cooking oil
  • 1 Teaspoon mustard seeds
  • Few curry leaves
  • 2 Tablespoon peanuts
  • 2 Green chillies
  • 1 Tablespoon sesame seeds
  • Pinch of hing (asafoetida)
 Procedure :

  • In a pan boil water, add green peas, fenugreek leaves and spinach to this. Cook it for 5 minutes. Now transfer this into a stainer and run it under cold water


  • Now take a mixer add blanched green peas, fenugreek leaves, spinach, green chillies, coriander leaves, ginger garlic and 1 teaspoon of salt and blend this mixture together

  • In a bowl take chick pea flour, add green paste, 1 tablespoon of oil, sugar, lemon juice, salt according to taste

  • Now add water to this mixture and make a smooth paste

  • Now add fruit salt to this smooth mixture and gently mix it again

  • Now take a Dhokla plates grease this with cooking oil. Pour the mixture into the greased plates. Steam the Dhokla mixture for 7 to 10 min

  • Remove the Dhoklas from heat, demould the Dhokla cut it into diamond shape


  • Now prepare tempering for the Dhoklas in a pan, heat oil add mustard seed, pinch of asafoetida, now add curry leaves, green chillies, peanuts and sesame seeds. Cook this for 2 minutes and now garnish the Dhoklas with this tempering
