Pineapple and Sweet Corn Rice


Rice is all time favourite. We can do lot of innovation while preparing rice.  Pineapple and Sweet Corn Rice is a very easy and tasty fried rice which can be even made by left over boiled rice also.

Preparation Time : 10 Min

Cooking Time : 10 Min

Ingredients :
Ingredients
  •  1 Bowl boiled rice
  • 1/2 teaspoon cummin seeds
  •  1 Onion chopped
  •  1 Cup boiled sweet corn
  •  1 Red capsicum deiced
  •  1/2 Cup Canned pineapple tit bits
  • 1 Table spoon chopped mint leaves
  •  1 Green chilly chopped
  • Salt according to taste
  • 1 Teaspoon fried rice Masala (Ching's)
  • 1 Tablespoon oil for cooking

Procedure
  •  Cook the Rice with enough water and salt to taste, making sure that the rice is not over cooked. keep aside. You can even use left over rice also
  • Heat the oil in pan and add the cummin seeds, Then add the chopped onion and saute it for 2 minute.
  • Now add red capsicum, sweet corn, mint leaves, green chilly, fried rice masala and salt saute all togeather for 2 - 3 minutes
  • Now add pineapple tit bits and cooked rice and mix well
  • Rice is ready serve it hot with curd. 
Tips : You can use the left over rice also. You can add other vegetables like beans , capsicum, baby corn even few dry fruits . A nice tiffin option for our kids..

Chilled Mango Dessert

Chilled Mango Dessert

A very refreshing mango dessert with a ginger and lemon twist......

Mango Sorbet


Preparation Time : 10 Min

Cooking Time : 5 -10 Min

Freezing Time : 5 -7 hours

Ingredients :
Ingredients
  • 2 Large Mangoes puree
  • 1 Teaspoon grated ginger
  • 3 Tablespoon Sugar
  • 2 Tablespoon lemon juice
  • 2 Lemons Rind 
  • 1/2 Cup water

For Presentation :
  • Mint Leaves
  • Few chopped mangoes

Procedure :
  • Take mangoes peel it and pureed it nicely
  • Now combine the ginger and 1/2 cup water in a pan and cook it for 5 to 6 min
  • Keep it aside for cooling
  • Now take another bowl add lemon juice, lemon rind, mango puree and sugar ginger syrup nicely
  • Transfer this mixture to the freezer proof container and allow it to freeze
  • After 2 -3 hours as the mixture is set take it out and beat it nicely so that the ice crystals are broken
  • Again freeze it. Repeat this step for 2 to 3 times
  • Now Scoop it in a glass or bowl according to your choice. Garnish it with chopped mango and mint leaves.
  • Enjoy your cool  and refreshing mango dessert.....


Tip : You can use sugar and lemon juice according to your taste. You can try this with other fruits also like Muskmelon or Strawberry.....

Mango Shake with vanilla and nuts

Mango Shake with vanilla and nuts: 

A Thick, creamy and satisfying shake with mangoes, ice cream and nuts which is almost a meal in itself.




Preparation Time : 10 Min

Cooking Time : 0 Min

Ingredients :
Ingredients
  • 1 Cup chopped mangoes chilled
  • 2 Tablespoon sugar
  • 2 Cup chilled full cream milk
  • 10 -12 Ice cubes

For Presentation :
  • 2 Tablespoon finely chopped mangoes chilled
  • 2 Scoop vanilla ice cream
  • 2 Tablespoon chopped cashew nuts
  • 2 Tablespoon Sliced Pistachio (pista)
  • 2 Tablespoon truty fruity
  • Few Fresh Cherries

Procedure :
  • Combine chopped mangoes and sugar and blend it in a juicer/mixer 
  • Once the mixture is smooth add chilled milk and crushed ice to this and blend it again
  • Now pour the mixture into a glass add a scoop of vanilla Ice cream to it
  • Now garnish it with chopped cashew nuts, sliced pista, chopped chilled mangoes, truty fruty and last top it with fresh or canned cherry
  • Serve it chilled and win the heart of your loved once........

Street Style Matar Kulcha



I remember during our childhood we enjoyed lot of street food paani puri, chaat, matar kulcha, chole tikki and lot more but now a days due to health and hygiene issues we avoid street foods. But now you can enjoy the same taste at your home with this simple recipe.

Preparation time : 20 Min

Cooking Time : 20 Min

Ingredients : 
Ingredients
  •  Kulcha bread  4No.
  •  1 cup dry peas (matar)
  •  1 onion, finely chopped
  •  1 tomato, finely chopped
  •  1 cucumber finely chopped 
  •  1-2 green chillies, finely chopped
  •  Finely chopped ginger 1 teaspoon
  •   Lemon juice 1 tablespoon
  •  Salt according to taste
  •  Red chilly powder according to taste
  • 1 teaspoon cumin powder
  • Asafoetida 1 pinch
  • 1 teaspoon chaat masala 
  • Chopped Coriander 1 tablespoon
  • Cooking oil 1 teaspoon
  • Green chutney according to taste
  • Sweet and Sour Tamarind sauce according to taste
For Presentation: 


  • Few chopped onions, cucumber, tomato, green chilly and coriander leaves
  • Green and tamarind sauce

Procedure :
  • Chopped onions, tomato, cucumber, green chilly, ginger and coriander leaves and keep aside
  • Boil dry peas in salty water and keep aside
  • Now take a pan add 1 teaspoon coking oil to it. Once the oil is hot add asofoetida, cumin seeds. chopped ginger and green chilly, saute it for 2 mins
  • Add chopped onion to this, saute it for 2 to 3 min then add salt, red chilly powder and boiled peas and mix them well.
  • Close the gas and take out the matar mixture in a bowl and add chopped cucumber, tomato, coriander, lemon juice and chat masala,. Mix them well and keep aside
  • Now take the kulcha bread cut it from middle and make a pocket kind segment
  • Just toast it from both the side on tava
  • For serving take the kulcha bread and one side of pocket apply  green chutney and second side Sweet and Sour Tamarind sauce and place the matar mixture (dry pea) in between and sprinkle the mixture of chopped onions, cucumber, tomato, green chilly and coriander leaves on it
  • Street style matar kulcha is ready to serve enjoy it with your family during breakfast, evening snacks or during monsoon time or when ever you like .......

Fruity Mocktail

Fruity Mocktail




An all time favourite drink with a sweet blend of a variety of fruit juices and fruits. Nice option for party. 

Preparation Time : 10 Min

Cooking Time : 0 Min  



Ingredients : For 4 servings
  • Lichee Juice 200ml
  • Apple Juice 200ml
  • Soda Water 200ml
  • Apple 3 tablespoon finely chopped
  • Pineapple 3 tablespoon finely chopped
  • Cherry 8 -10 seedless finely chopped
  • Orange 2 tablespoon orange segments finely chopped
  • Lemon juice 1 tablespoon
  • Ice cubes 12 -15
For Presentation :
  • 1 tablespoon lemon juice
  • 1 tablespoon powdered sugar
  • 1 tablespoon edible confetti
  • Cherry 4
Procedure :
  • Finely chop all the fruits (apple, pineapple, orange & cherry) and keep them aside. 
  • Once the apple is chopped, mix it with lemon juice so that its color remains same
  • Now in a jar add lichee juice, apple juice and all the fruits and mix them well

  • Meanwhile for presentation coat the upper circle of glass with lemon juice, in a plate take powdered sugar and confetti and roll the top of the glass with this mixture
  • Now glass is ready put some crushed ice in it
  • Add soda water to our mocktail mixture
  • Time to pour the mocktail mixture and serve it with cherry

Tips : If  pineapple and cherry is not available you can use kiwi or strawberry
